Chicago, IL – Everything’s coming up truffles! And Pane Caldo invites you to indulge your passion for these delectable morsels in a special menu devoted entirely to the unique versatility of the Oregon black and white truffles for the month of February. Come experience the culinary creativity of Chef Maurice Bonhomme as he transforms this tantalizing favorite into palate-pleasing works of art.

As we all know, the winter truffle season for Italy and France is now over. But, the season for domestic Oregon truffles is still in full swing! Truffles were first cultivated in Oregon in as recent as 1987 and eight new truffle species have been discovered since that time. In fact, the late James Beard has been quoted as declaring the Oregon truffle “at least as good…as [Italian] white.”

Bonhomme is very excited to feature an entire special menu dedicated to this wonderful fungi. “We strive to have our truffles on the menu in a unique form every day, but this is something different and special for us and our customers. I can create more variety and sampling for each and every guest dining with us at Pane Caldo.”
